Went to tour a college today, and I ended up applying! Can't wait to learn even more about their school and hopefully go there! Still have lots to look into but it's a step in the right direction. Annabelle even liked it too! She was so good during the tour and even sitting while I filled out my application. I couldn't do this if it weren't for my family though. They are the main reasons I get to even finish and continue school in the first place. I only have about 2 months left till I go back to school. I am very excited/sad at the same time. I am very excited to go back because I get to spend time with people, I know I can complete everything on time there, I know I can succeed there, and I know I need it for my mental health. I am very sad because I will not get to spend as much time with Annabelle but it's better for both of us. Luckily her first birthday is on a saturday this year so I get to be with her all day for that :) Hope everyone's doing great!

It's Been Too Long!
I've been so busy you guy's! Between Fourth of July festivities, decorating Annabelle's room, reorganizing/cleaning the whole house top to bottom, racing and my family reunion today I have completely forgotten about the blog! Things have been great, busy but great. I hope everyone had a fun and safe holiday! Annabelle loved her first fireworks, she mainly loved watching all the other kids running around. Even funnier, one of the ladies by us also had a daughter named Annabelle! Today we had our family reunion which was so fun! My cousin from California came up and we rode the four wheeler through the trails and had fun talking. Annabelle doesn't like sprinklers at all! Annabelle also rode the four wheeler with us :) Anyways , not much more to say! Oh yeah, I started reading a new book, The Happiness Project

Sorry!
Sorry I haven't been online lately everyone. I just keep forgetting to post and have been busy! Anyways today was fun, did Annabelle's hair, she has pig tails! Played with the dog outside and Annabelle. Then hung out with some friends came home and had some dinner, now I'm here! haha. Not much to say! Other than I've been working on deep cleaning each room in the house, I deep cleaned Annabelle's yesterday. I was going to do mine today but then got too busy so maybe tomorrow? Not sure yet. I kind of want to rearrange my room, but not sure where I'd put anything... I'm also working on organizing everything and making homemade basically EVERYTHING... Just waiting to run out of all the things I want to make, already ran out of dishwasher detergent so that's one I'll have to put on the shopping list. Anyways I think I'm off to make a shopping list, maybe watch a movie and then bed! Have a great night everyone!

A Fun and RAINY Day
So today was pretty much spent cleaning. Then I took Annabelle out to the coffee shop to hang out with my friend which was really fun till I walked home! I started walking home and it started POURING outside. Annabelle wasn't in a stroller, I was carrying her. But I was smart and brought her sweatshirt just in case it rained. I thought I'd be able to get home because the rain let down, but as soon as I got up on the main road someone came driving by and it was EXACTLY like one of those movie scenes where a car drives by and just SOAKS the person on the sidewalk in water... Yeah that was me and Annabelle...So I turned around and hid undercover at our city hall and had my mom come get us. Man was that interesting! haha. Today was good though! Probably should have brought the stroller but the stroller tires always get screwed up so I don't want it to get stuck while crossing the main/busy intersection with Annabelle. Carrying her is just easier (except on my arms haha). I think we will have to make another trip over there soon :) Very fun!

Decorating!!!
Today I spent playing with Annabelle, and making decorations for her room! Decorating her room is one of my goals for this summer. After spending tons of time procrastinating I finally starting working on it! I found two old wood frames I had and never used, so I painted those white. I also had a paint canvas that I never finished which was painted yellow so I made that into a painting for her room. For the two frames, one I made a giraffe silhouette out o craft paper to put in it and put alphabet stickers on it. I'm still working on what to put in the other frame. Well there's nothing else to say or today! That's all my day consisted of! haha.

Lost Puppy!
today started great! I got up just before Annabelle did so I was actually awake and happy! I thought I was going to stay awake this morning but Annabelle fell asleep so I did as well haha. I woke up though before her next feeding so I had time to clean bottles and do laundry. I got more cloth diapers in the mail as well so I was very happy this morning! Everything is washed and dried. Then there was a pit bull mix running around our neighborhood, she kept coming back to our house though. She was very friendly but we couldn't find her owner so we had to call the cops. She chewed through her leash that she was on (not a smart idea on the owners part putting a dog of that size on a regular leash and not a chain)... Anyways she's safe and she was nice to be around. Annabelle sure loved her! Afterward Annabelle and I played with her bubble machine again, the wind was a bit stronger so the bubbles were floating everywhere! She's still not sure what to think of them but it's still fun (at least to me). Then some family came over and saw Annabelle :) That was fun! The rest of the night has been pretty calm. We put Annabelle footprints on mine and my brothers race cars, turned out very cute! So I'd say today was successful!

Update on Those Chicken Strips and the Salad
Well the meal turned out great! Should have taken pictures but as soon as I had one bite I just dug in! The chicken wasn't the great but was still yummy. Now here's the big kicker and why I love this so much, I hate salads, very rarely will I have one (basically the only time I eat one is if it's offered at some event and even then I stray from it) but this salad w/salad dressing was SO FREAKING GOOD! I went back for seconds! I'll definitely be getting more of this salad and making more of this dressing for a different thing to eat at lunch time! Here's the recipe:
2/3 cup mayonnaise
1/3 cup fresh dill, chopped
2 1/2 teaspoons mustard powder
2 teaspoons fresh lemon juice
Kosher salt and freshly ground pepper
1 1/4 cups breadcrumbs (preferably panko)
1 cup finely grated sharp cheddar cheese
2 large eggs
1 cup vegetable oil
1 1/4 pounds skinless, boneless chicken breasts, cut into wide strips
1 5-ounce package mesclun greens
1/2 cup cherry tomatoes, halved
Directions
Make the sauce: Mix the mayonnaise, 1 tablespoon dill, 2 teaspoons mustard powder, the lemon juice and 1 tablespoon water in a small bowl. Season with salt and pepper. Set aside.
Combine the breadcrumbs, cheese, the remaining 1/2 teaspoon mustard powder, 1 teaspoon salt and 1/4 teaspoon pepper in a shallow bowl. Beat the eggs in another shallow bowl. Heat the vegetable oil in a large nonstick skillet over medium-high heat. Dip the chicken strips in the beaten egg and then in the breadcrumb mixture, pressing so the coating sticks. Working in batches, add the chicken to the skillet and cook until golden brown and crisp, about 3 minutes per side, adjusting the heat as needed. Transfer to paper towels to drain.
Place the greens in a large bowl and toss with the tomatoes, the remaining dill and 3 tablespoons of the dill-mayonnaise sauce. Season with salt and pepper. Divide the chicken and salad among plates and serve with the remaining sauce for dipping.
